Do they know whats good for them?

If I give my indian sticks a variety of food plants do they know whats good for them and will they ignore what they shouldn't eat?

Like the ivy, honey suckle, lettuce, apple?

Yes, they will. And the plants you listed are all known as foodplants for this species, they should be accepted, at least after a little while.
